Xbox Presents: The Guaca-Rumble at Taco Madness! Guerrilla Tacos vs. La Venganza

[dropcap size=big]W[/dropcap]hat’s better than a handful of bomb tacos and celebrating with friends on a beautiful Cinco de Mayo Saturday overlooking downtown Los Angeles? How about also watching two of California’s heaviest taco hitters duke it out to see whose guacamole is the best!

Thanks to our friends over at Xbox, L.A.’s taco golden boy Wes Avila of the one and only Guerrilla Tacos will be testing his fine dining skills against the plant-based vegan phenom, Raul Medina of La Venganza Taqueria.

Avila, a self-professed fan of the Halo franchise, will be bringing his refined take on guacamole. His recipe borrows some flavors from southeast Asia with the addition of fish sauce and baby dried shrimp for that maximum flavor bomb. Wes’ background as both a fine-dining chef, and a taco truck pioneer should serve him well.

Meanwhile, Medina, who calls himself an old-school gamer who prefers platformers that harken back to the golden age of console gaming, will be retaliating with a somewhat runnier guacamole that is an ode to Olvera Street’s famed salsa that smothers the taquitos that dominate the birthplace of the LA taco scene. Medina’s plant-based approach to tacos sets him apart from nearly every other lauded taquero in Los Angeles, so his fluency in fruit should give him insights into how to create a simple, yet killer, dish.

Want to make these guacs at home? Here are the recipes, straight from the chefs.

Wesley Avila’s Xbox Guac

4 limes juiced
1 Serrano chile sliced thin
2 cloves garlic sliced thin
1/4 cup fish sauce
1 tbsp sugar
1 1/2 cup baby dry shrimp
1 red onion sliced julienne
2 cups water
1 cup red wine vinegar
1/2 cup sugar
1 tablespoon of  Pickling spice

Directions:

Mix all ingredients except shrimp. Strain liquid and pour over shrimp. With a spoon mix liquid with shrimp set aside

In 2 qt pan heat up water, vinegar. Bring to a simmer, add sugar and pickling spices. Remove from heat and pour over red onions
Set aside for later use

Salt to taste
Flowering cilantro

La Venganza’s Classic
2 avocados

1 Roma tomato seedless

1 roasted tomatillo

2 roasted Chile güeros, minced

1/2 onion, minced

2 cloves roasted garlic

1 tsp Olive oil

1/3 bunch of cilantro

Salt

Lime

Mash in a molcajete!
