Taco Tastes: Classic Sweet Potato Tacos by Chef Wes Avila ~ Guerrilla Tacos

[dropcap size=big]W[/dropcap]es Avila's Guerrilla Tacos continues to be a standard bearer of the Los Angeles Alta California cuisine. After six years of roaming the streets of Los Angeles in a food truck, serving what are considered to be the city’s finest gourmet tacos, Avila and his business partner Brittney Valles opened their first brick-and-mortar restaurant in the Arts District in downtown L.A., at the corner of 7th and Mateo.

L.A. Taco editor Daniel Hernandez recently sat down with the Guerrilla Tacos chef and owner, to talk about what he's learned in the transition, what tacos are always on the menu, and describe the making of the restaurant's most beloved long-term item, the sweet potato tacos.
