Tijuana Taco Safari: The Best Chile Relleno Tacos In Colonia La Libertad with Ed’s Manifesto

Tijuana's incredible tacos are not just asada and birria, and once you're ready to dive deeper into Tijuana's taco scene, look no further than La Libertad neighborhood, specifically the front yard of "La Güera" on Calle Miguel Guerrero.

For the third episode of our Tijuana Taco Safari, Ed Calderon, the urban survivalist behind the popular Ed's Manifesto account on Instagram, took us to his favorite chile relleno taco located in the colonia that he grew up in. It is a taco so simple and so delicious that it even makes Ed say "this taco is so good, it should be illegal."

When driving up and down the cracked asphalt-lined steep hills of the working-class community, I couldn't help but ask the natural taco expert how he found this spot, which is definitely one of the best tacos I've had in Tijuana. Ed's answer? "Always look for street dogs and crowds outside of places, that usually means that there are good tacos!" Very solid taco scouting rationale, from one taco scout to another.

Tacos La Güera is located in her front yard and specializes in chile relleno, chorizo, bistec, and crispy tripita tacos on handmade corn tortillas. Of course, with a thick smear of TJ-style guacamole. The salsas are not watered down and are full of flavor. This low-key taco destination in one of Tijuana's most notorious neighborhoods really does a great job of maintaining that home-cooked sazón, which is a quality that is hard to maintain the more that you scale up your taco production. A friend who joined us for this ride brought a $600 white truffle because #content and we proceeded to have an unforgettable taco experience.

Also in this episode, Ed dispels (or proves?) the long-lived rumors of places doing dogmeat tacos in Mexico.

Tacos Chiles Rellenos "La Guera:" C. Miguel Guerrero 12325-12365, Libertad, 22400 Tijuana, B.C.

Taco Life Pro Tip: Ask for a "Taco Canadiense" for a taco that has a little bit of all the meats, and the chile relleno.

Tamal or Tamale? How to Correctly Pronounce the Singular Form of Tamales

The tamal vs. tamale debate has an almost emotional connection with people simply because it becomes a “how my family speaks the language vs. how it’s ‘supposed to be’ written” type of language conflict. In a culture like Mexico, where family always comes before anything, it makes sense that people will go with what feels familiar rather than what they are expected to say.

More Than 70 People Reported Feeling Ill After Eating Oysters At L.A. Times ‘101 Restaurants’ Food Event

Ragusano is disappointed that the L.A. Times didn’t publicly disclose that there was an outbreak at their event. “Obviously they’re not going to print it in their paper,” Ragusano said. “But they‘re a newspaper and newspapers are supposed to share the news. This is how people usually find out about something like this,” she added. “It's ironic because it happened to them.”
